Kim Cooke’s “The Dressing Free Salad”
Acqualina Spa by ESPA’s Lead Therapist Kim Cooke’s favorite salad is “The Dressing Free Salad”. In a medium-size bowl, place chopped Romaine, fresh arugula, fresh chopped dill. Then add finely diced celery, thin slices of radish, slices of cucumbers, and cherry tomatoes halves. Add dried cranberry, chopped walnuts, fresh pear, goat cheese, and lime juice. It’s definitely a favorite at any dinner party and the first bowl to be emptied. Bon Appetit!
