4 Quick & Easy Dairy-Free Dessert Recipes
Lactose intolerance and casein allergies have steadily risen for the last few decades. As a result, there’s been a burgeoning of dairy alternatives – from milks to yogurts to ice creams. The only trouble with some of these store-bought alternatives is that they are full of additives. So what might have started out as a healthier option, is no longer so.
We’ve put together a few dairy-free dessert options that omit the additives, but go big on flavor. And since we aren’t all 5-star chefs, we’ve made these recipes simple enough that they can be whipped up by anyone, anywhere. So next time your sweet tooth is on a rampage, why not try one of these?
Dairy-Free Trail Mix Cookies
What you’ll need:
1 cup of almond meal
1/4 cup of hazelnut meal
1/2 cup of unsweetened shredded coconut shreds
1/3 cup of coconut sugar or brown sugar
1/4 cup of goji berries
1/2 tsp of baking powder
1/4 tsp of salt
1 chia egg (1 tbs of chia, 3 tbs of water and let it stand until it congeals to an egg-like consistency)
3 tablespoons of melted coconut oil
1 tablespoon of cinnamon
1 teaspoon of vanilla
1 teaspoon of orange zest
Topping:
2 tablespoons of Sweet Spreads Chocolate Brownie Coconutter
What you’ll do:
1. Make your chia egg and let stand until it forms an egg-like consistency.
2. Mix all of your dry ingredients together until well combined.
3. Melt your coconut oil on the stove top and slowly add to your dry mixture along with the vanilla. Mix well. Then add in your chia egg and mix until everything is evenly distributed.
4. Use a spoon to scoop out the dough into balls and place on a cookie sheet about one inch apart. Place in the fridge for about 30 minutes. Remove from the fridge and flatten the balls into more of a cookie shape. Bake for 7-10 minutes at 375F or until the corners are golden brown. Heat your coconutter and drizzle across the top. Serve warm or pop in the fridge again until you’re ready to serve.
Nice Cream Sundae
Everyone loves ice cream, but wellness warriors don’t love xanthum gum, carrageenan, or other additives that are not so great for your body. So we’ve come up with a healthier take on the classic sundae!
What you’ll need:
6 frozen ripe bananas
1 1/4 cups of chopped pecan
3 tablespoons of Sweet Spreads Cinnamon Roll Coconutter
1 room temperature banana
1 red cherry
1 tablespoon of cacao
2 tablespoons of agave
1/4 cup of unsweetened coconut flakes
What you’ll do:
1. Blend your frozen bananas in the blender until smooth.
2. Heat up your coconutter until it turns into a syrup-like consistency.
3. Gently fold into your frozen bananas along with 1 cup of the pecans.
4. Cut your room temperature banana in half (ala a banana split). Scoop your “nice cream” onto the banana.
Sprinkle on the remaining nuts and coconut flakes. Set aside.
5. In a small saucepan, mix together your agave and cacao to form your chocolate syrup. Drizzle across your sundae, place your cherry on top and enjoy!
Dairy-Free Fudge
What you’ll need:
1/2 cup raw cacao powder
1/2 cup coconut oil (room temperature)
1/3 cup raw walnuts
1/4 cup + 2 tablespoons raw honey
1 teaspoon vanilla extract
Toppings
¼ cup of cacao nibs
¼ cup of freeze dried raspberries
What you’ll do:
1. Blend all of your ingredients (minus the toppings) in the blender until they are smooth.
2. Line a baking tray with parchment paper and pour the mixture out on top. Smooth out until the mixture is evenly distributed.
3. Top with the cacao nibs and raspberries and place in the fridge until firm.
Berries and Cream Popsicles
Nothing makes you feel like a kid more than a popsicle. But for this one, you don’t have to chase down the ice cream truck, or spend two hours on the treadmill to burn it off.
What you’ll need:
1 large banana
1 can of full fat coconut milk
1 teaspoon of vanilla
¼ cup of agave syrup or honey
¼ cup of raspberries
¼ cup of cacao nibs
What you’ll do:
1. Blend the bananas, sweetener, and your coconut milk in a blender until smooth.
2. Pour into your popsicle molds and slowly drop in the raspberries and cacao.
3. Add in the popsicle sticks and place in the freezer for 1-2 hours or until frozen solid.
