Nutrition Booster Week: Black Bean Salsa to Boost Iron Absorption
Today’s Nutrition Booster recipe is a great Black Bean Salsa! To boost iron absorption from beans, you must consume them with a food source that contains vitamin C. In this recipe your vitamin C source is the lime juice while the black beans are loaded with iron!
What you’ll need:
1 14.5 oz. can black beans, drained or use black beans that have been cooked from the dried state)
1 14.5 oz. can corn drained or use fresh corn
1 12 oz jar of salsa (or try to make our favorite mango salsa)
1⁄4 cup cilantro, chopped
1 1⁄2 tablespoon fresh lime juice
What you’ll do:
1. Mix all of the above together and use this as your base.
2. Serve on top of a salad, baked potato, in a wrap, in a taco shell, or as a dip
Play with your food
Add some chopped vegetables or fruit such as bell pepper, carrots, yellow onion, red onion, green onion, avocado, tomato, or mango.
Add some cooked chicken, fish, shrimp, or quinoa.
Add a chopped chili or jalapeno pepper for a spicy flavor, or add some chili powder.
