Pack in the Produce: 5 New Healthy Recipes to Add to Your Diet
Whether you throw them in a juicer, cook them, bake them, or eat them raw – fruits and vegetables are one of our best and tastiest sources of the nutrients our bodies need to perform at their best. Try these five healthy recipes from Dr. Will Clower for delicious new ways to pack the produce into your diet.
Cilantro and Carrot Rice
This recipe works well to complement some Fggriflfleadaashrimp or fish.
What you’ll need:
3 tablespoons butter
4 medium carrots, peeled, chopped
2 large red bell peppers, chopped
1 cup onion, chopped
2 garlic cloves, minced
4 cups long-grain white rice
6 3/4 cups vegetable broth
1/2 cup chopped green onions
2/3 cup chopped fresh cilantro
Salt and pepper to taste
Diced tomato
What you’ll do:
1. Melt butter in heavy, large pot over medium-high heat.
2. Add the next 4 ingredients; sauté 5 minutes.
3. Add rice; stir for 2 minutes.
4. Add broth; bring to boil.
5. Reduce heat to low, cover and cook until rice is tender, about 20 minutes.
6. Mix in the green onions and cilantro. Season with salt and pepper. Garnish with diced tomato
Homemade Vegetable Dip
What you’ll need:
1 1/4 cup plain yogurt
3/4 cup sour cream
3 garlic cloves, minced
1 cucumber, peeled, seeded, and chopped
1 tablespoon fresh mint, chopped
Salt and pepper to taste
Assorted raw veggies (extra for serving)
What you’ll do:
1. Put all of the ingredients into a food processor or blender and process until well combined.
2 Chill and serve with raw vegetables.
Morning Citrus Shake
What you’ll need:
2 grapefruit
1 cup peeled and diced ripe mango or peach
1 medium banana
8 oz. peach yogurt
2 tablespoons honey
1 cup crushed ice
1/2 teaspoon vanilla extract
What you’ll do:
1. In a blender, juice grapefruit until you get 1 1/3 cups of juice.
2. Add the mango, banana, yogurt, honey, ice and vanilla extract.
3. Blend until smooth and enjoy!
Fresh Fruit Dip
What you’ll need:
8 oz. plain yogurt
1 1/2 teaspoons honey
Orange zest from 1/2 of an orange
What you’ll do:
1. In a small bowl, combine the yogurt, honey and orange zest.
2. Serve as a dip with fresh sliced fruit of choice.
Strawberry Smoothie
What you’ll need:
8 oz. of strawberries
3/4 teaspoon vanilla
3/4 cup milk
1 teaspoon honey
What you’ll do:
1. Place all of the ingredients in a blender or food processor.
2. Process until smooth consistency is reached.
3. At this point you can chill or store it in refrigerator or serve over crushed ice.
