Tasty Healthy Salad Recipe from Six Senses Spa

This delicious salad is a perfect balance of satiating and healthy and includes lightly seared scallops (which are high in omega-3 and vitamin B-12) and loads of raw veggies. The summer is a perfect time for enjoying lovely seafood and crisp, raw vegetables since the longer vegetables are cooked the more nutrients deplete. So pick up some fresh ingredients and balance body and mind!
Zucchini, Rocket and Scallop Salad from Six Senses Spa:
(serves 2)
Salad:
2 medium zucchini, chopped
½ red onion, chopped
½ red bell pepper, chopped
2 handfuls rocket
6 fresh scallops, shelled, without roe
2 roasted, marinated artichokes, quartered (quality jarred will work)
Dressing:
1 cup + 1 tbsp extra-virgin olive oil
1/3 cup lemon juice
2 small cloves garlic, minced
1 jalapeno, chopped (use to taste)
small bunch coriander, chopped (use to taste)
large pinch ground coriander seeds
For the dressing, combine all ingredients in a bowl. Marinate the zucchini, onion, and pepper in the dressing for 3 hours. Quickly sear the scallops in a very hot non-stick pan, using as little oil as possible. Toss the rocket, zucchini, onion and pepper and pour off excess dressing. Place the salad on two plates and top with scallops and artichokes.
