Wellness Week Menu Day 3: Miraval Arizona

Seasonality and localization are cornerstones of Miraval’s ingredients, and we love that they take the effort to source from companies and farmers that share those views.

BREAKFAST: Miraval Omelet Ingredients (Serves 1):
¼ tsp extra-virgin olive oil
¼ cup fresh shiitake mushroom, diced
1 tbsp green onion, finely chopped
¼ cup fresh tomato, diced
¼ cup fresh spinach, packed
1 tbsp non-fat cream cheese
3 egg whites, lightly whipped
⅛ tsp sea salt
⅛ tsp black pepper, freshly ground
Instructions:
1. Heat a sauté pan with a flameproof handle over medium heat and add the olive oil.
2. Add the vegetables and sauté until vegetables begin to soften, approximately 5 minutes.
3. Add the egg whites and season with salt and pepper. Cook until the bottom is done and the sides are firm, approximately 4 minutes.
4. Place the pan under the broiler for about 2 minutes to finish cooking the top of the omelet. Remove from heat. Spread cream cheese over the top, and fold over half the omelet and serve.

LUNCH: Miraval’s Mediterranean Sandwich Ingredients (Serves 1):
1 piece whole-wheat focaccia, halved
¼ cup eggplant spread
¼ cup roasted red peppers, julienned
2 slices of tomato
¼ cup portobella mushrooms, julienned and sautéed
¼ cup arugula
1 tbsp basil, finely shredded
2 oz. fresh mozzarella cheese, sliced (optional)
Instructions:
1. Place the focaccia on a cutting board. Spread one side of each focaccia half with the eggplant spread.
2. Lay the roasted red peppers, tomatoes, mushrooms, arugula, basil, and mozzarella.
3. Top with other piece of bread and cut in half on the diagonal.

DINNER: Oven-Roasted Vegetables with Pan-Seared California Halibut & Warm Mexican Vanilla Vinaigrette Ingredients (Serves 4):
For the Vegetables
1 tsp olive oil cooking spray
1 cup parsnips, peeled & cut into 2-in. bâtonnet (matchsticks)
1 cup broccoli stems, trimmed & cut into 2-in. bâtonnet
1 cup butternut squash, cut into 2-in. bâtonnet
1 cup bulb of fennel, cut into strips
1 cup hearts of palm, cut into quarters lengthwise
¼ tsp sea salt
¼ tsp black pepper, freshly ground
1 tbsp mixed fresh herbs
½ tsp garlic, minced
1 tbsp fresh mixed herbs
1½ cups thickened vegetable stock
½ cup vanilla-infused rice-wine vinegar
¼ tsp sea salt
⅛ tsp black pepper, freshly ground
Four 4-oz. halibut filets
1 cup vanilla bean vinaigrette (left)
Instructions:
For the Vegetables
1. Preheat oven to 450°F. Place the vegetables on a baking sheet and mix them with the olive oil. Season with the salt, pepper, and herbs.
2. Roast the vegetables for 10 minutes, or until lightly browned and moisture is noticeable. Remove the vegetables from the oven and transfer to a clean dish.
For the Halibut
1. Preheat oven to 375°F.
2. Heat a large oven-proof sauté pan over medium-high heat and lightly spray with olive oil. Add the halibut and sear for 1 minute.
3. Turn the halibut over and place in the oven and cook for 4 minutes or until fish is just cooked throughout.
4. Return pan to stovetop and add the vinaigrette (below) to simmer.
For the Vinaigrette
1. In a mixing bowl whisk together all the ingredients. Adjust seasonings with additional salt, pepper, and herbs if needed.
2. Arrange ½ cup of the roasted vegetables on each plate with 1 piece of halibut on top. Drizzle with 2 tablespoons of the warm vinaigrette.
